Our 'Colombia El Tambo' is grown by Carlos Zambrano. He owns the 2-hectare farm Finca El Derrumbe in the village of Buena Vista within the municipality of El Tambo. He grows about 11,000 Castillo plants on this small farm,and harvests them ripe when they are a very dark red color. The coffee is depulped in the afternoon after it is harvested, and fermented in open tanks for 15–18 hours before being washed as many as six times to remove the mucilage. It takes 7–10 days to dry the coffee in parabolic dryers. Carlos has been growing coffee since about 2012.
