We don't drink decaf. But enough of you asked that we went and found the best one we could.

This is it.

EA decaf uses ethyl acetate, a naturally occurring compound found in fermented sugars and ripe bananas, to remove caffeine without stripping what makes the coffee worth drinking. No harsh solvents. No flat, papery cup. Just a clean, intentional process that respects the bean.

What you get is a fully washed Colombia from Huila that actually tastes like coffee. Melon, graham cracker, milk chocolate. Smooth and approachable from start to finish.

Limited run.

Origin: Huila, Colombia
Process: Washed, EA Decaffeination
Elevation: 1,400 to 2,000 meters
Varietals: Castillo, Caturra, Colombia

Huila is one of Colombia's most celebrated coffee regions. High altitude, volcanic soil, and a climate that produces consistently clean, sweet cups. The farmers here have been refining their craft for generations.

What makes this lot different is what happens after harvest. Ethyl acetate decaffeination starts with steaming the green coffee under low pressure to open the seeds' pores. The coffee is then cycled through a water and ethyl acetate solution over eight hours until no caffeine remains. Steamed once more to remove any traces. Then dried and polished for export.

EA is one of the few decaffeination methods that preserves the coffee's original flavor compounds. That's why this cup tastes like Huila, not like decaf.
