Processing: Wine Yeast + Purple Fruit Co-Fermentation
✨ This is not a subtle coffee. ✨
Purple Fruit Co-Ferment is an anaerobic, wine-yeast-driven explosion of grape candy and dark berry sweetness. It's bursting with grape soda and grape Jolly Rancher with a deep blackberry jam, finishing sweet, juicy, and saturated with fruit.
Sebastián Ramirez specializes in carbonic maceration and high-impact fermentations. This lot undergoes:
• 120-hour anaerobic fermentation with wine yeast, dehydrated grapes, and fruit glucose
• Depulping
• 72-hour anaerobic fermentation with CO₂ injection
• Controlled patio drying at 40°C with a two-phase shade dry
The result is intensely aromatic, layered, and unmistakably grape.
This is a statement coffee. Ideal for adventurous drinkers and anyone who wants something that tastes nothing like “normal” coffee.
