Origin Story:

Jamison Savage is a specialty-coffee producer best known as the founder of Savage Coffees and for producing ultra high-end Panamanian coffees—especially from farms such as Finca Deborah (and associated Savage projects in Panama’s highlands). Jamison's coffees have become fixtures on the global competition stage and in top cafés. He’s widely described within the industry as an innovation-driven producer focused on pushing processing and quality.

Savage Coffees Catuai Washed starts with harvesting perfectly ripe cherries, ranging in altitude from 1550 – 1600 MASL from the Volcan region and reading 21-22 on BRIX meter. These cherries are carefully selected for a second time before escorting them to the wet mill where they’ll be stripped of their fruit and skin. Shortly thereafter, the grains are deposited on the second level on a modular 3 tiered, raised African bed system designed by Jamison Savage. The grains are frequently mixed and agitated inside parabolic dry-houses where, heat, humidity, and airflow are carefully controlled to ensure even and consistent drying.

After approximately 12 days in the dry-house, the coffee has dried to an estimated 11%. It is then bagged in grain-pro and stored in a Bodega where temperatures are cool and stable. This reposo or seasoning process is critical to quality control. It provides the coffee an opportunity to stabilize and equalize its moisture content. The coffee is then hulled and sorted by size, density, and color.
