Jardines del Edén is operated by Felipe and Carlos Arcila, fourth-generation growers known for their disciplined approach to cultivation and processing. Their Sidra trees are grown at 1850 meters—an elevation that produces low yields but remarkable flavor clarity. Sidra itself is a rare, high-maintenance varietal, prized for its complexity and difficulty to produce well.

This lot was processed using the farm’s EF2 Natural method, a controlled multi-stage fermentation designed to highlight the Sidra varietal rather than overwhelm it:

  • 24 hours aerobic
  • 50 hours anaerobic below 22°C
  • 10 days greenhouse drying

The result is a cup defined by precision rather than intensity—clean fruit, composed sweetness, and a finish that lingers with intention.

Precision-Grown Sidra

Sidra is a low-yield, high-maintenance varietal known for its exceptional complexity and rarity in Colombia. Jardines del Edén cultivates it at 1850 meters with meticulous attention, allowing this difficult-to-grow cultivar to achieve its full clarity and sweetness.

Controlled EF2 Fermentation

A measured process—24 hours aerobic, 50 hours anaerobic, 10 days greenhouse drying—executed with strict temperature control. This level of discipline yields a cup that is refined, layered, and exceptionally clean for a natural.
